Chicken Ala Carbonara

Actually, I really don’t know what to call this experiment I did, or if there’s an existing dish like this.

I think it was yesterday (or was it the other day) that I cooked Carbonara. I was craving for it and luckily we have the ingredients. But, I didn’t know that we have only little pasta left so, I ended up with a lot of excess sauce.

Last night, I was thinking of what I can cook that I can use the leftover Carbonara sauce. I checked our refrigerator and we have chicken. So, there, I just did some experimenting.

In fairness it tasted good. I might cook it again hehehe.

Just want to share the recipe, in case you want to try it too.

Carbonara Sauce:

1. Saute onion, mushroom and ham (you can use bacon).
2. Pour in the Cream of Mushroom soup (make sure that you have diluted a pack in at least 3 cups of water).
3. Stir until mixture thickens.
4. Add grated cheese.
5. Add the All Purpose Cream.
6. Stir until you’re satisfied.

Chicken Ala Carbonara:

1. Saute crushed garlic.
2. Stir fry Chicken until golden brown.
3. Add a cup of water.
4. Let it boil until the Chicken is cooked.
5. Pour in the Carbonara sauce you prepared.
6. Stir and cook until you’re satisfied.

I haven’t been eating rice for two weeks now but, because of this, I ate a cup. 😉 if you are like me who loves it creamy and cheesy, you’d love this too. 🙂

Of Heavy Rains and Ice Cream

This is my 1st Something New for this year.

I spent the past 4 days with KZBT, her family and CGT at Bicol. And as usual, I brought home with me a copy of Cebu Pacific’s Inflight Magazine SMILE. I was looking through its pages, when one of the pages about Bicol caught my attention. And one of the things that really tickled my fancy was the picture of SILI ICE CREAM.

Bicol is known for their love for SILI (chili) and a sili as a flavor of ice cream, is really quite interesting. We searched online as to where in Albay, can we taste this ice cream.

The place is called 1ST COLONIAL GRILL, a grill situated in Metro Gaisano Mall in Albay. Aside from Sili Icecream, they also have other crazy ice cream flavors like calamansi, pili nut, tinutong (toasted rice), Baileys and malunggay (a leafy vegetable). We tried all these crazy flavors.

Not Your Usual Ice Cream Flavors

Sili Ice Cream – is your usual sweet and creamy but have an after melt effect and burning sensation that you get when eating spicy food.

Malunggay Ice Cream – is your typical malunggay taste. Bitter but creamy form. This was our least favorite because of it’s strong taste. Ugh!

Tinutong na Ice Cream – is a surprise waiting to be tasted. It is almost as what dark chocolate taste.

Kalamansi Ice Cream – is a combination of sour and creamy. Hmmm it’s like having a kalamansi juice in cream form. hahaha.

Baileys – is almost like Baileys shake.

Pili – is just like your vanilla ice cream with Pili nuts.

Their ice cream dish consists of 3 scoops, which you can request to have the flavors combined in a serving. Each serving costs only 79 pesos.

Carbonara

I asked my youngest sister to teach me how to cook Carbonara (my first attempt was a failure, to think I used a ready mix Carbonara sauce!). I loved her Carbonara last Christmas, since I am craving for more, I’ve decided to cook it myself.

PASTA:
1. Put water in a pot; pour in around 2 tbsp of oild; put in some salt.
2. Wait until the water is boiling, put in the pasta.
3. Check every once in a while, if pasta is already cooked.

CARBONARA SAUCE:
1. Dilute the Cream of Mushroom soup in a cup.
2. Saute Onions and Ham, and Bacon.
3. Pour in the Cream of Mushroom soup.
4. Stir the mixture constantly until it thickens.
5. Put in the grate Quick Melt Cheese.
6. Stir until the Cheese melted.

There… =) hmmm… now, I want another serving!

chicken curry

This is my first time to try and cook Chicken Curry. Hmmm… I cheated cause I used a ready mix curry for my sauce. 😀

Ingredients:
1 pack of Curry Mix combined with 1/2 cup of evaporated milk and 1/4 cup of water
3 cloves of garlic crushed
1 medium size onion sliced
1 kilo of cut Chicken (which is washed with salt and pepper)
1/3 cup of evaporated milk
2 or more potatoes
2 or more carrots (optional)
2 red bell pepper

Direction:
1. Combine the Curry Mix with water and milk.
2. Saute Onions and Garlic
3. Add Chicken. Saute until light golden brown.
4. Pour in the Curry Mix.
5. Simmer for 5 minutes.
6. Add Milk.
7. On a different pan, fry the potatoes, and carrots.
8. Add the fried potatoes and carrots and red bell pepper.
9. Simmer until sauce thickens.

=============

Next time, I want to try cooking this without using ready made Curry Mix. Ü

Liked the taste. 😉 it’s creamy and a little spicy (cause I put some Cayenne Ground Pepper, shhhhhhhh!)
